About 90 percent of the time, they’re the regular hotcakes drenched in butter and syrup, but every now and then, I’ll mix it up and throw some chocolate chips, blueberries or cinnamon into the batter. (One time, I was feeling adventurous and added all three ingredients. I don’t recommend it.)
I’ve even been known to add watermelon to our pancake breakfasts. I’ve offered pictures and recipes of those meals in the past (here and here), and I’m happy to share my most recent watermelon-meets-pancake creation with you today.
These Watermelon Pancake Sandwiches are pretty darn tasty. They can also be eaten just like a sandwich (no fork!), which means kids will love them, too. And here’s the real kicker: August is National Sandwich Month, which makes these “sandwiches” a perfect way to celebrate!
WATERMELON PANCAKE SANDWICHES
INGREDIENTS
Maple syrup
8 silver dollar-sized (3-4”) pancakes
4 slices seedless watermelon, the same size as the pancakes
INSTRUCTIONS
Spread syrup over one side of each pancake. Place a slice of watermelon on the syrup-brushed side of four of the pancakes. Top the watermelon with the other four pancakes, syrup side down. Serve immediately.

Good idea to eat these as a sandwich….less sugar with out all that syrup. When I eat pancakes they are swimming in maple syrup! Your ways sounds much healthier.
