Since January marks the start of the New Year – or the “morning” of 2014 – I’ve decided to feature three breakfast recipes here on the blog this month (today, January 17 and January 31). All, of course, will use watermelon as a key ingredient and all (I hope) will be delicious.
The first recipe is a simple one because it’s a smoothie. A smoothie is really just a bunch of stuff thrown in a blender and pureed for a minute. It doesn’t get much easier than that, which is good for a morning meal when you’re groggy and haven’t had your first cup of coffee.
While it’s easy to make a smoothie, you do have to pay careful attention to the ingredients that go into it. Add the wrong thing or too much of something, and its ruined. You don’t have to worry about that with today’s recipe, which contains watermelon, honey, mint, yogurt and a wee dash of cinnamon. Sounds like a good combination, don’t you think?
WATERMELON YOGURT MINT SMOOTHIE
INGREDIENTS
2 cups seedless watermelon chunks
1 tablespoon honey
1 tablespoon fresh mint leaves (or to taste)
1 cup lemon yogurt
dash of cinnamon
INSTRUCTIONS
Puree the watermelon, honey and mint quickly (do not over blend). Pulse in the yogurt and cinnamon until smooth. Pour and enjoy!
