I’m a big fan of salsa. I usually enjoy it the simplest way I know how – straight from a jar – but I’ll be the first to admit that nothing is better than fresh, homemade salsa. And I can also say with certainty that there’s no better salsa than watermelon salsa.
I’ve made watermelon salsa on a few occasions, and although it’s got a different overall flavor than its tomato-based cousin, it’s delicious in so many more ways. Below is a simple recipe I’ve used in the past. Feel free to tinker with it – more hot sauce, less hot sauce, etc. – to suit your own tastes.
WATERMELON SALSA
INGREDIENTS
2 cups finely chopped seeded watermelon (do not puree)
1 cup crushed pineapple, drained well
1 cup sweet onion, minced
1/4 cup chopped fresh cilantro
1/4 cup orange juice
1/4 teaspoon hot sauce (or to taste)
DIRECTIONS
Stir the watermelon, pineapple, and onion together with the cilantro, orange juice, and hot sauce in a bowl. Cover, and refrigerate at least 30 minutes before serving.
