Ever since we were kids, we were told that “breakfast is the most important meal of the day.” If that’s true, then why do 18 percent of adults skip the morning meal on a regular basis? And yes, I’m one of those habitual breakfast skippers.
My goal this month is to correct that bad habit. It’s a good month for the change, because it happens to be National Breakfast Month. One of the ways I hope to add more breakfasts to my diet is by eating more of my favorite foods in the morning – including lots of watermelon.
Many people think of watermelon as an accompanying snack during a barbecue or other later-in-the-day meals, but like many fruits, it’s actually quite versatile and tasty as a breakfast item. And so, to help myself – and millions of Americans just like me – I’ve compiled a list of great ways to incorporate watermelon into your breakfasts.
BREAKFAST LASAGNA – I know what you’re thinking: Lasagna – even breakfast lasagna — takes a long time to prepare, right? Not this one. Only four ingredients, and every one of them is delicious.
WATERMELON PANCAKES – For me, there’s no better Sunday breakfast than pancakes. So when I found this recipe for watermelon pancakes, I immediately added it to my weekend to-do list. Only 43 hours until this dream becomes a reality.
WATERMELON DONUTS – Has anyone ever had homemade donuts? If so, you know that they can be – how do I put this delicately? – disappointing. That outcome will change if you make watermelon donuts … and I plan to very soon.
I agree, breakfast is a great time to enjoy watermelon!! It provides energy and vitamins that you wouldn’t find in plain pancakes.Fun and unique recipes..thanks!
Exactly! And like I said, there’s no better breakfast than pancakes. Think about it! It’s CAKE … for BREAKFAST!
