The second recipe in this month’s back-to-school series is for a tasty little snack called “Watermelon in a Blanket.” It’s essentially watermelon wrapped in a tortilla and served with a tasty dipping sauce. Sounds good, right?
The recipe on the National Watermelon Promotion Board website called for crepes as the “blanket,” but to make this recipe simpler, I’ve substituted flour tortilla shells. Enjoy!
WATERMELON IN A BLANKET
INGREDIENTS
6 8” soft tortilla shells
2 tablespoons cinnamon sugar
12 1” by 4” seedless watermelon logs, drained to remove excess moisture
1 serving each of vanilla and lemon yogurt, for dipping
INSTRUCTIONS
Cut tortilla shells in half. Sprinkle one side of the tortilla with cinnamon sugar and place a watermelon log at the end of each. Roll them up and serve with the flavored yogurts for dipping.
This sounds like a WINNER!
