Kids are back in school now, which should make a lot of parents very happy. Unless your child is headed off to kindergarten, in which case you may be a little sad (but happy later). With back-to-school season in mind, this month’s two featured recipes will focus on lunchbox-friendly options for kids … those who still carry lunchboxes, of course.
Today’s lunchbox recipe is for watermelon dippers, which I’ve actually made at home for myself and plan to make again very soon. One note to busy parents: Instead of making your own dip using the first three ingredients, you can substitute your child’s favorite yogurt as a ready-made dip.
WATERMELON DIPPERS
INGREDIENTS
8 ounces sour cream
4 tablespoons sugar
1 teaspoon vanilla extract
1 serving watermelon sticks or small wedges
INSTRUCTIONS
Blend together the sour cream, sugar and vanilla in a small serving bowl. Use as a dip for the watermelon. To save time, yogurt can also be substituted for the dip.
