RECIPE: SUMMER PITA SANDWICH

Even though summer doesn’t start for another 3 days, 2 hours and 27 minutes, it’s never too early to start eating like its summer. That includes warm weather dietary staples like popsicles, grilled hot dogs (which are good all year round, really) and this sandwich. Enjoy!

SUMMER PITA SANDWICH

INGREDIENTS

  • 4 watermelon wedges, seeded and rinds removed
  • 1 cup diced cooked chicken breast, skinned
  • 1 tablespoon cilantro, chopped
  • 2 tablespoons plain low-fat yogurt
  • 1/4 teaspoon garlic powder
  • 1 dash cayenne pepper
  • 2 whole wheat pita bread, halved
  • 1/4 cup prepared spreadable herb cheese
  • 4 large lettuce leaves

 



DIRECTIONS

Place sliced watermelon on paper towels to remove excess liquid. Mix chicken, cilantro, yogurt, garlic salt and cayenne. Spread inside surfaces of pita bread halves with herb cheese. Fill each with about 1/4 cup chicken mixture. Arrange watermelon and lettuce in pita bread.

  • In growing up watermelon was not my favorite, in fact I would not eat it. What a wasted youth. I have since discovered that it really is good and then there is pickled watermelon rind in the winter and watermelon sorbet in the summer, what treats.

  • I have YET to try pickled watermelon rind. I definitely want to try it soon though.
